Dhall

A tasty meal for the soul!

Ingredients:

1 cup red lentils, well rinsed

3 large tomatoes, ½” cubes

4 onions, thinly sliced or finely chopped

2 garlic cloves, minced

½ tsp cayenne or to taste

1 tsp turmeric

1 tsp salt, optional

1 tbsp parsley, minced


Directions:

Put lentils, cayenne, salt and turmeric in 4 cups boiling water and cook until tender (5-8 minutes - do not overcook as you do not want them mushy).


Add garlic when onions are almost done and cook another few minutes.

Add tomatoes to the onion mixture and cook until pulpy, about 5-10 minutes.

Add the lentils to the onion and tomato mixture and cook another 5 minutes or until desired consistency. Garnish with parsley.


Lovely served over brown rice! For added heat, use tomato chutney or kimchi as a condiment.
