Potato Waffles (our take on a Chef AJ recipe)

* A traditional style waffle iron will give you crispier waffles. The Belgian style will give you deeper pockets with softer waffles on the inside. We use the traditional as we like them crispy!*


Ingredients:

Directions:

Heat up the wafffle iron to medium. When ready light is on, season the grill by spraying with a high heat oil (we use grapeseed oil). *** By using an oil spray bottle, you are using a tiny fraction of the oil you would use otherwise. Also, when the waffle iron is seasoned, we have found that the next waffle may not need any oil at all certainly less.

It helps to flatten the potato by placing it on your counter top and pressing it with your hand or a plate. Place the flattened potato in the middle of the waffle iron and close the lid. After a minute or so, press the lid down firmly.

Time will vary depending on the size of the potato and how crisp you want it. Start with 10 - 12 minutes, then lift the lid gently to check; keep cooking to desired crispness and browning.

Excellent with apple sauce, organic ketchup or plant based yogurt, whatever you want! Great as a side with a big salad.
