Spanish Lentil Stew

Ingredients

1 cup green lentils rinsed well and soaked overnight

½ cup red lentils - (red lentils don't have to be soaked but should be well rinsed). Myca has done it without soaking the green lentils overnight and it worked. I still prefer to soak them, though.

2 large yellow onions

2 cups carrots

2 cups celery

8 - 10 large garlic cloves (or to taste!)

3 sweet peppers

2 lbs potatoes

2 tbsp fresh or dried oregano

1 cup finely minced parsley

1 tbsp paprika

1 tbsp smoked paprika (optional but great - not spicy)

1 tbsp turmeric

1/2 tsp himalayan salt (optional)

8 cups homemade vegetable broth (or 2 tetra packs of Imagine organic broth -we buy ours at Zehrs)

1 cup frozen sweetlet peas (Myca puts in 2 cups)


Directions:

Mix the paprika, smoked paprika, salt and turmeric into a loose paste.

Next, chop veg into bit sized pieces, your preference, i.e., potato pieces can be fairly large.

Add all ingredients to the pot BUT only 6 cups of the broth and no peas. The rest of the broth and the peas get added after the cooking process is done.

***Make sure not to go too far over the MAX line mark on the inner pot!


Instant Pot Instructions (6 quart)

It is very important to turn the pressure valve on top of the lid to the Sealing position (turn it toward the back of the pot).


Press the “pressure cook” button and adjust the time using the plus/minus buttons, to 10 minutes. When it is done, it automatically goes into Keep Warm mode - the readout shows an L and numbers after it. This lets you know it is done.


It will slowly release pressure over time, or you can turn the steam valve on the top to the Venting position for quick release of the pressure. We use a long wooden spoon to move the valve forward as the escaping steam is intense!

It is safe to open when the small round silver button on the lid has sunk down into the hole (you'll understand when you see it).


Remember to add the peas!


If desired, add more broth. We enjoy the consistency of the stew when it’s initially cooked, but that more broth is needed after it cools and thickens over time.
