The Waffles
Ingredients:
3 cups organic gluten free oats
2 1/2 cups water
1 banana
1 tsp cinnamon or to taste
1 tsp vanilla
Directions:
Place all ingredients in a high speed blender and blend until smooth.
Set temperature to medium heat or 350 degrees.
Season the waffle iron by spraying with a high heat oil, like grapeseed oil; generally, you only need to do this before the first waffle, but that will depend on your particular waffle iron. Using an oil spray bottle reduces the amount of oil to a tiny fraction of what you would be using otherwise.
Use a large spoon to place the batter onto the grill surface being careful not to overfill. Use the spoon to spread evenly, but not right to the edge.
Cook until golden brown....the longer you cook, the crispier they will be.
Try 8 to 12 minutes. If you want, check to see if your waffle is browned by gently opening the lid after 8 minutes, but resist opening the lid sooner as your waffle may come apart. We have found that 12 minutes works best on our waffle iron.
* these waffles keep well in the fridge and can be re-crisped in the toaster!
The Apple Pie Ice Cream (our take on a Chef AJ recipe)
Ingredients:
2 cups organic apples, skin on, cored and cut into 1" chunks, then frozen
2 cups frozen organic bananas, cut into small chunks, then frozen
1 cup almond or soy milk, or plant based milk of your choice (approximate)
1 tsp vanilla
1/2 to 1 tbsp apple pie spice from the following recipe:
6 tbsp cinnamon, or to taste
1 1/2 tsp nutmeg this makes enough for several batches;
1 tsp ginger store in air tight spice bottle
1/2 tsp allspice
Directions:
Place all ingredients in a food processor and blend until smooth and creamy. More milk may be necessary to get the mixture to blend well;
add as needed until the ice cream comes to the desired thickness.
Best served right away, but stores well in the freezer...... pull it out well ahead of serving time as it freezes rock solid! Remove from the freezer at least 2 hours ahead and store in the fridge until serving time.
Place a generous scoop on top of each waffle. Yum.
Keeping a stock of cut up apple and banana pieces in your freezer makes it easy to make this recipe any time.
Try placing some of the ice cream in popsicle molds - a great treat on a hot summer's day.
